Ingredients

  • 2 x 8 oz packages cream cheese softened
  • 2 tbsp sour cream
  • 1 tsp garlic powder
  • 1 cup finely shredded sharp cheddar reserve half
  • 2/3 cup bacon pieces reserve half
  • 2 large jalapenos or 3 medium, finely diced, reserve half

Instructions

  • Dice the jalapeno into fine pieces. You can remove the seeds, or leave them, depending on the spice level you want.
  • In a medium bowl, combine the cream cheese, sour cream, and garlic powder. You can use an electric mixer if it’s easier for you.
  • Next, add the cheese, bacon pieces, and diced jalapeno. Mix well.
  • Form the mixture into a ball, (I find this easiest to do with gloves on.) and set it on a sheet of parchment paper.
  • Chill for 15 minutes.
  • Combine the remaining cheese, bacon, and jalapenos in a small bowl. Remove the cheese ball from the refrigerator, and use a gloved hand to press the mixture into the top of the cheese ball, and all around the sides.
  • Refrigerate for one hour, or until ready to serve.
  • Serve with crackers, pretzels or whatever you like to dip.
