Dice the jalapeno into fine pieces. You can remove the seeds, or leave them, depending on the spice level you want.
In a medium bowl, combine the cream cheese, sour cream, and garlic powder. You can use an electric mixer if it’s easier for you.
Next, add the cheese, bacon pieces, and diced jalapeno. Mix well.
Form the mixture into a ball, (I find this easiest to do with gloves on.) and set it on a sheet of parchment paper.
Chill for 15 minutes.
Combine the remaining cheese, bacon, and jalapenos in a small bowl. Remove the cheese ball from the refrigerator, and use a gloved hand to press the mixture into the top of the cheese ball, and all around the sides.
Refrigerate for one hour, or until ready to serve.
Serve with crackers, pretzels or whatever you like to dip.
