Mellowcreme Pumpkin Cookies

Soft, chewy, and full of festive fall flavor, these Mellowcreme Pumpkin Cookies are made with just a few simple ingredients—including a box of spice cake mix! Topped with colorful sprinkles and a candy pumpkin, they’re the perfect easy treat for Halloween, Thanksgiving, or cozy autumn days.

Ingredients
  

  • 1 15.25 oz box Spice cake mix
  • 2 large eggs
  • ½ cup vegetable oil
  • Fall sprinkles for decorating
  • 24 Mellowcreme pumpkin candies

Instructions
 

  • Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
  • Mix the dough: In a large bowl, combine the spice cake mix, eggs, and vegetable oil. Stir until a soft, sticky dough forms.
  • Add sprinkles: Pour fall sprinkles into a shallow dish. Using a medium cookie scoop, portion the dough into balls and gently roll the top half of each in the sprinkles. Tip: If dough is too soft to roll, chill in the refrigerator for 15–20 minutes.
  • Bake: Place cookie dough balls 2 inches apart on the prepared baking sheet. Bake for 9–11 minutes, until edges are set.
  • Add pumpkins: Remove cookies from the oven and immediately press a mellowcreme pumpkin into the center of each cookie while still warm.
  • Cool: Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Store in an airtight container at room temperature for up to 3 days.
  • For longer storage, freeze unfrosted cookies for up to 2 months and add pumpkins after thawing.
