Strawberry Crunch Blondies are a delightful dessert featuring chewy blondie bars, creamy frosting, and a crunchy Oreo topping. Perfect for parties or bake sales, these easy-to-make treats are packed with sweet strawberry flavor!

Ingredients
  

Batter

  • 1 box strawberry cake mix
  • ½ cup of unsalted butter melted
  • 2 eggs
  • 2 tablespoons strawberry gelatin

Frosting

  • 8 ounces cream cheese softened
  • 1 teaspoon vanilla extract
  • 1 ½ cups powdered sugar
  • 2-3 tablespoon milk

Crunch Topping

  • 20 golden oreos
  • 4 tablespoons strawberry gelatin
  • 4 tablespoons salted butter melted

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper.
  • In a large bowl, mix the strawberry cake mix, melted butter, eggs, and strawberry gelatin until fully combined.
  • Spread the batter evenly into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Let them cool completely before frosting.
  • In a mixing bowl, melt the cream cheese until smooth and creamy.
  • Add the powdered sugar, mixing until fully combined.
  • Add 2-3 tablespoons of milk and the vanilla extract, beating until the frosting reaches a smooth, spreadable consistency.
  • Place the golden Oreos in a food processor and pulse until crumbled. (Alternatively, crush them in a ziplock bag using a rolling pin.)
  • Mix the Oreo crumbs with strawberry gelatin powder and melted butter until combined.
  • Spread the cream cheese frosting evenly over the cooled blondies.
  • Sprinkle the strawberry crunch topping generously over the frosting, pressing it in slightly to adhere. Add a few crumbled golden oreos as well.
  • Slice into squares and enjoy!

Notes

  • Allow the blondies to cool completely before frosting to prevent melting.
  • For extra crunch, add a few whole golden Oreos on top for decoration.
  • Use room temperature cream cheese for the smoothest frosting.
