For the Red Layer:

  • 8 Strawberries, frozen
  • ½ cup of water
  • 2 tablespoons of white sugar

For the White Layer:

  • 12 ounces of coconut milk
  • ½ cup of white sugar
  • ¼ cup of lemon juice

For the Blue Layer:

  • 1 ½ cup of warm water
  • 3 tablespoons of sugar
  • ½ teaspoon of raspberry kool-aid

Substitutions & Variations

  • Why not use fresh raspberries instead of strawberries for the red layer? It will give a tart but fresh flavor. 
  • Yogurt can be used instead of coconut milk if you wish. You could use flavored yogurt to help enhance the flavors. 
  • Blueberries are an excellent substitute for raspberry Kool-Aid if you can’t get any. The blueberries have fresh and vibrant flavors. 
  • Add some edible glitter to some of the layers for an extra twist. 

Step-by-Step Instructions

Step One – Puree the strawberries, water, and sugar until smooth in a blender. Pour into popsicle molds, filling them ⅓ of the way. Freeze for 2 hours.

Step Two – Blend the coconut milk, white sugar, and lemon juice until well combined. Pour over the frozen red layer, filling the molds ⅔ of the way. Freeze for another 2 hours.

Step Three – Mix the warm water, sugar, and raspberry Kool-Aid. Pour over the white layer, filling the molds to the top. Freeze for at least 4 more hours.

Equipment

  • Popsicle Molds
  • Popsicle Sticks
  • Blender

Ingredients
  

Red Layer:

  • 8 Strawberries frozen
  • ½ cup water
  • 2 tablespoons white sugar

White Layer:

  • 12 ounces coconut milk
  • ½ cup white sugar
  • ¼ cup lemon juice

Blue Layer:

  • 1 ½ cup warm water
  • 3 tablespoons sugar
  • ½ teaspoon raspberry kool-aid

Instructions
 

  • In a blender puree the strawberries, water and sugar together. Pour ⅓ way into the popsicle molds. Freeze for 2 hours.
  • For the white layer, add coconut milk, white sugar, lemon juice in a blender and mix together.
  • Add this layer on top of the red frozen layer and fill ⅔ of the way full. Freeze for another 2 hours.
  • For the blue layer mix the water, sugar and raspberry kool aid. Add this layer to the top of the popsicles and freeze for 4 more hours.

Notes

You can substitute the strawberries for raspberries in the red layer if necessary.
Also, yogurt can be a substitute for coconut milk.
