Melt the white chocolate in the microwave in 30-second intervals, stirring until smooth.

Form cake balls using a 1-inch scoop to create the same size for each bon bon. Place on a parchment covered baking sheet.

Add the pop rocks – press your finger into each cake ball to make a hole. Then pour about ½ teaspoon of pop rocks into each. Close the hole by forming the dough ball back together and rolling back into a nice circular shape.

Tips for Success

  • Speed up cooling – Place the crumbled cake in the freezer for 10–15 minutes.
  • Thin the chocolate – Add a little coconut or vegetable oil if the white chocolate is too thick.
  • Use dry hands – Moisture can activate the pop rocks too soon, so keep your hands dry when handling them.

Storing and Freezing

Refrigerator: If you have any leftovers or prepare them in advance, ensure they are stored in the refrigerator to keep the chocolate nice and set. Add them to an airtight container. They will last in the fridge for a few days.

Freezer: Freeze for up to 3 months. For best results, ensure they are completely cooled before freezing them. Place them in a single layer on a baking sheet and freeze them for about an hour. The short pre-freeze helps them from sticking together.
